5. Sleight of Hand

Ingredients:
5oz cold brewed August Uncommon “Breathless” Black Tea*
.5oz Seedlip Spice
1 teaspoon Demerara sugar*
1 teaspoon wine tannin*
For the Cold Brewed Black Tea:
15 parts black tea leaves
1 part water
Directions: Measure by weight. Let steep for 24 hours. Strain through tea strainer/fine strainer. Keep refrigerated.
For the Demerara Sugar:
2 parts Demerara sugar
1 part water
Directions: Measure by weight. Dissolve over low heat. Keep refrigerated.
For the Wine Tannin Powder:
25 parts wine tannin powder
1 part water
Directions: Measure by weight. Whisk together until combined. Keep refrigerated.
Directions for cocktail: Build the cocktail in an old fashioned glass and garnish with smoked cherry wood using a smoke gun.
