Why the bad rep?: Broccoli is a cruciferous vegetable—it contains sulfur. Cook it too long and you release the gas. That’s why broccoli can smell, and is hard to cook right.
The fix: Trim away all the extraneous stalk, so each bunch is about the same diameter from tip to stem. Then, cook until just tender. Drop it into already-boiling salted water, and then let simmer for five to seven minutes at most.
