Straight Outta Cozumel
Skip the sweet and sour and make your own pineapple simple syrup with this recipe from Moxie’s Grill & Bar (which has locations in Dallas and Houston).
1.5 oz. Altos Blanco 100 percent Agave Tequila
.5 oz. Cointreau
.75 oz fresh lime juice
.5 oz. pineapple simple syrup (directions below)
3 large leaves of basil (2 for the cocktail, 1 for garnish)
Combine all ingredients in a shaker with at least a fist size amount of ice. Shake vigorously for about 12 seconds. Fill your cocktail glass with new ice (the ice in the shaker is broken down and will melt too quickly). Strain the cocktail over fresh ice. Garnish with a basil leaf.
How to make the pineapple simple syrup: Gently reduce pineapple juice from 3 cups to 1 cup over medium low heat. (Note: You can store this in the fridge for up to three weeks.)
