Sweet Pea Hummus
“Hummus is the perfect appetizer because it’s light, delicious and versatile; you can make many variations and dip just about anything in it. I love adding sweet green peas to my hummus because they add an extra citrusy sweetness and creaminess to the dish. You can even add green curry to it to give it a Thai flare. It’s a lighter, healthier twist on an old favorite,” says Steve Lindner, Executive Chef and Founder of ZoneManhattan.com.
- 1/2 lb. Garbanzo beans, cooked
- 1/2 lb. fresh sweet peas
- 1 onion, finely chopped
- 1/2 heads garlic, finely chopped
- 1/2 bunches parsley, chopped
- 1/2 bunches fresh cilantro, chopped
- 1/2 cup lemon juice
- 1/8-cup olive oil
- 1 Tsp. ground coriander
- 1 Tsp. ground cumin
- Pinch dried red pepper flake
- Salt & pepper to taste
Add garbanzo beans to food processor and pulse for 1 minute. Combine other ingredients into food processor and puree until smooth. Add salt and pepper to taste.
