Dead Rabbit Irish Whiskey
The famous NYC Irish bar of the same name put out its own whiskey this year: a 5-year-old blend to commemorate their 5-year anniversary. Most people would have phoned it in, but the Dead Rabbit folks went bold and tried something unique: this whiskey is aged 5 years in ex-bourbon casks before spending a short finishing period in half-sized, virgin American oak barrels. The resulting whiskey is dry and heavy on oak and tannin, but balanced against heather honey notes with a slight hint of smoke. It’s almost too good to mix, but you should try it anyway.
