Maso Martis’s flagship “Madame Martis” Riserva spends a full 108 months aging with the spent yeasts from its secondary fermentation still in the bottle, a patient process allowing it to develop those creamy bread-and-butter notes without overpowering the bright fruitiness that gives Trentodoc its flavorful pop on the palate. As an added bonus, this small, family-run winery is also one of the region’s more sustainable operations, working solely with certified organic grapes from its own estate and other small organic growers in the region.
