This hearty salad can easily be made ahead of time so you have a high-protein meal ready right after the gym. The Greek yogurt adds probiotics for gut health, while the pecans add healthy omega-3 fat and a delicious crunch.

Makes 4 servings
- 4 halves chicken breast
- Olive oil
- Salt and pepper to taste
- 6.5 ounces plain Greek yogurt
- 3 tbsp light mayonnaise
- 2 tbsp lemon juice
- 1½ tsp Dijon mustard
- 1½ large Gala apples, chopped
- 1/3 cup celery, chopped
- 1/4-1/2 cup pecans, chopped
- 1/4 cup chopped fresh parsley
How to make it
Preheat oven to 350 degrees. Cook chicken in a baking dish with olive oil drizzled on top and salt and pepper to taste for 30 minutes or until fully cooked.
Mix yogurt, mayonnaise, lemon juice and mustard until combined.
Dice cooled chicken and add to mayonnaise mixture. Add remaining ingredients. Toss until evenly coated.
