If there’s one thing we’re always on the lookout for, it’s a good healthy substitute for mac ‘n cheese—and this deliciously healthy recipe absolutely fits the bill.

- 3 oz lentil pasta
- 2 cups raw soaked cashews
- 1 cup nutritional yeast
- Juice of half small lemon
- 1 tsp yellow mustard
- Salt and pepper, to taste
- 2 cups broccoli
How to make it
Soak cashews overnight in filtered water. Drain, and set aside.
Steam broccoli until soft.
Cook lentil pasta in boiling water, and, once soft, drain, saving the hot water.
In a Vitamix or food processor, blend soaked cashews, nutritional yeast, lemon juice, mustard, salt and pepper, and 2 Tbsp hot pasta water. Add water if needed until sauce is slightly thick but smooth.
Pour sauce over cooked noodles, then top with broccoli.
