We may have started out making eggs by frying and poaching, but baking is a delicious frontier, full of endless tasty and healthy options.
We love baked eggs because we avoid a lot of the fat necessary for frying, but sacrifice none of the taste. It looks like an elegant dish (perfect for guests), but also is fuss-free. Allow your eggs to do their thing in the oven while you get to the rest of the meal.
“First, baked eggs are dairy free, and they’re healthy, high in protein and low in fat. It is a filling dish that will make you feel satisfied, more so than other traditionally ‘healthy’ options that will make you feel like eating again in 10 minutes. At Measure, we whisk our eggs before baking, but you can also just crack them and bake them, which is super easy for an at-home cook. We bake them for around 8 minutes on 350º. It’s also very versatile. You can add any vegetable or herbs you want to add some flavor and variety,” says Chef David Vandenabeele of Measure Lounge at Langham Place, New York.
