We’re not going to lie to you and suggest that this absurdly delicious pancake recipe is particularly healthy — it’s not. What we will tell you is that if you want to maximize your cheat day, you better make damn sure you make these pancakes for breakfast.

The beauty of having your cheat day fall on a weekend is you can leisurely whip up whatever it is you decide to indulge on. If that turns out to be a late-morning stack of pancakes that the recipe below is right up your alley. 

This foolproof banana chocolate chip pancake recipe will ensure that your cheat day breakfast is as tasty as possible. And if a suped-up pancake platter is good enough for The Rock, it should work just fine for you. 

Banana Chocolate Chip Pancakes – (Serves 4)

2 cups all-purpose flour (gluten-free flour works, too)
6 tbsp light brown sugar 2 tsp baking powder
1⁄2 tsp cinnamon
1⁄2 tsp sea salt
1 large, ripe banana, mashed
4 large eggs
2/3 cup milk
1⁄2 cup mini chocolate chips
nonstick cooking spray

1) Whisk the flour, sugar, baking powder, cinnamon, and sea salt together in a large bowl. Whisk the mashed banana, eggs, and milk together in a medium bowl and add to the dry ingredients. Stir gently until the ingredients are just combined. Fold in mini chocolate chips. The batter will be thick.

2) Heat a large nonstick skillet over medium heat. Coat the pan with cooking spray. Make mini pancakes, using about 1⁄4 cup for each, cooking the pancakes until the outer edges firm up and the bottom is golden brown, about 11⁄2 minutes. Flip and cook the other side until golden brown, another 11⁄2 minutes.

3) Transfer the pancakes to a plate and set aside. Serve with Canadian maple syrup or a schmear of butter. pair with mimosas and dig in.
