Prosciutto at Fish & Game, Hudson, NY
This James Beard Award–winning restaurant helmed by the uber talented Zak Pelaccio (Fatty Crab and Fatty 'Cue ) is a Hudson Valley gem, and a two-hour train ride from Manhattan. Just off the main thoroughfare sits the historic brick building that formerly housed a 19th-century blacksmith shop. The charming restaurant's phenomenal menu is prix fixe, and reservations are hard to get (they're only open Thursday–Sunday for dinner), but there’s a well-kept secret that only the locals know: Fish & Game's small cozy bar, with a fireplace and plush leather couches, also serves a few of the night’s dishes a la carte, like homemade prosciutto with maple glazed rutabaga and raw oysters with wood-roasted whey and lemon drop granita, kimchi hollandaise.
