Spicy Raw Beef Salad at Central Provisions, Portland, ME.
In a historic building on the wharf in this fantastic foodie town, Central Provisions has mostly bar seating, and the best spot is near the open kitchen where you can watch chef Christopher Gould work his magic. The cocktails are imaginative and delicious (try the Lion's Tail: gunpowder rye, pimento dram, fresh squeezed lime, and angostura bitters), but the small plates steal the show. Not to be missed are the spicy raw beef salad served with sriracha, cilantro, and peanuts, and the foie gras served with raspberry, millet granola, and buddha's hand — both have melt-in-your-mouth texture with flavors that pack a punch.
