You can’t be mixing every drink for each person who walks through the door, so Michael Chiarello recommends a self-serve drink station. The cocktails he serves outdoors are different from his indoor cocktails: “I make them with bolder flavors, and I give some a hint of smoke,” he says. He recommends one drink that goes well with all the food. “Red Beer is one of my personal favorites,” he says. “Just put out a pitcher of mix, a bucket of ice filled with bottles of a light lager like Corona, and big glasses. I add a plate of salt for people to dip their glass rims, and a dish of lime wedges.”Back to top
