Harkening back even further into history, City Tavern, founded in 1773, has been around since America’s beginnings. According to Chef Walter Staib, George Washington used City Tavern as his headquarters during the Revolutionary War. The four-story colonial house has 10 dining rooms and a wine cellar, where servers in period costume deliver apple-wood-smoked pork chops, which are salt-cured and smoked using the 18th-century technique. This time-honored dish is served with Pennsylvania Dutch style sauerkraut, mashed potatoes, and Dijon mustard.
