About 50 miles outside of Austin, Mueller’s is legendary in nearly every circle of BBQ enthusiasts. Started by Louis Mueller in 1949, Mueller’s is now run by his son Bobby, and has gotten accolades from everyone from Texas Monthly to the James Beard Awards. “Yes, they have very good pork ribs here in the middle of nowhere, but the star of the show are the Texas Beef Ribs, affectionately called “Dino-Ribs.” These are a full meal, about 2-inch-thick meat all on one bone, dusted with salt and coarsely cracked black pepper, slow smoked over Texas post oak. You will get juice up to your elbows. No sauce for these,” says Meathead Goldwyn.
