Produced for the last four-hundred years, Bacanora is a spirit distilled from wild Silvestre Maguey agaves found in Sonora, Mexico. Like tequila is the most popular drink in Jalisco, Bacanora is the go-to spirit in Sonora.
The tough mountain terrain means that the plants must be hand-picked and carried back to the distillery on the backs on donkeys. Tequila can only be distilled from the Weber blue Agave and it must be double distilled. “No such provisos exist for Bacanora,” says spirits writer Robert Plotkin. Part of the reason many drinkers are unaware of Bacanora is because it was illegal until 1992. That year, the state of Sonora established origin of denomination standards and regulations. Bacanora is as clear as vodka, but is smoky, smooth and sweet. It’s perfect as a sipper on its own or in cocktails.
