48. Recipe: Southwest Quinoa Salad
Toss together this protein-packed salad made with chicken, beans, and quinoa in 20 minutes.

1 cup quinoa, cooked in 2 cups chicken broth, following directions on package
2 (14.5 ounce) cans Red Gold® Petite Diced Tomatoes, or 1 (28 ounce) can Red Gold Petitie Diced Tomatoes, drained
1 cup frozen whole kernel corn, thawed
1 (15 ounce) can black beans, rinsed and drained
2 cups shredded cooked chicken, or diced cooked chicken (like rotisserie)
3 tablespoons barbeque sauce
1 avocado, chopped
3 green onions, thinly slices
Salt and black pepper to taste
2 tablespoons chopped fresh cilantro
1. In a large bowl combine quinoa, diced tomatoes, corn, black beans, chicken and barbecue sauce. Fold in avocado, green onions, salt and black pepper.
2. Top with the cilantro and serve.
