Citrus-lime Coleslaw

Put down the mayo—use oil instead to boost this slaw with natural fats.

Instead of mayo, this version of coleslaw uses an olive oil and citrus dressing, which balances the flavor of the cabbage perfectly.

Prep time

  • 1 garlic clove
  • 1/2 of jalapeño, rough chopped (seeds & pith removed)
  • Zest and juice of 1 lime
  • Zest and juice of 2 oranges
  • 1 handful cilantro
  • 1/2 cup olive oil
  • 2-3 tsp honey, optional
  • 1 tsp salt
  • Black pepper to taste
  • 16 oz coleslaw mix

Whisk garlic, jalapeno, lime juice and zest, orange juice and zest, olive oil, honey, and salt in a small bowl. 

Place coleslaw mix into large bowl.

Pour dressing over coleslaw mix and combine.

Serve immediately or place in the fridge for up to 24 hours to allow flavors to combine.
