Set a timer.
It takes about three and a half minutes per pound, so you can cook a 12-pound turkey in 42 minutes. It’s very, very quick: No more getting up at 6 in the morning to put your turkey on, so you can free up the oven for your casseroles later. When the turkey’s done, pull it out and let it sit for about 10 minutes; you don’t want to cut it right away because all of the juices will just flow out.
