The Gruit, like this Heather Ale, might just be the oldest style of ale still produced in the world. Brewed by Gaels in Scotland as far back as 2000 B.C., it predates the use of hops for bittering by millennia. The beer is traditionally made with malted barley, heather flowers, and bog myrtle. Williams' concoction is poured over fresh heather flowers to infuse for an hour before it's fermented to create a citrusy, herbal, and floral liquid.
