No institution has greater claim to the surging oyster stout than the very brewery that invented it. Founded in 1868, London's Hammerton Brewery began brewing its Pentonville oyster stout in 1938, but would shut its doors less than 20 years later. Fortunately, a descendant of the Hammerton family revived the brewery and its flagship beer in 2014. As required by the original recipe, Hammerton still utilizes whole, wild Maldon oysters for a beer that beautifully contrasts briny, earthy notes with those of sweet, roasted malts.
