Berliner Weisse is gaining incredible popularity with American brewers, but the pale, cloudy, sour German beer style is arguably done best by Dr. Fritz Briem of the Doemens Institute in Munich. His brewery pays homage to the traditional recipe, which dates back to the 16th century, by open fermenting and bottle conditioning the beer without filtering or pasteurizing it. The result is a light, funky, tart, almost fruity brew that, even at 5 percent alcohol (a bit higher than other classic versions), can still be enjoyed on a hot summer day.
