The chemical process that occurs when peanuts are roasted could trigger an immune response and induce an allergic reaction, according to research published in the Journal of Allergy and Clinical Immunology.
In the experiment, mice were exposed to peanut proteins through the stomach or skin. The animals that were given the roasted samples had a stronger immune response compared to those exposed to raw nuts.
In humans, responses can range from skin reactions to more extreme effects, such as difficulty breathing and swelling of the mouth. But if scientists have indeed identified the chemical process responsible for severe allergic reactions, future products could be made safer by eliminating roasted nuts. For now, more studies are needed to determine whether you should make the switch from roasted to raw.
