Serving Memphis-style barbecue, Pappy’s Smokehouse slow smokes their meats for up to 14 hours over apple or cherry wood and finishes them off with one of three sauces—Pappy’s Original, Sweet Baby Jane, or Holly’s Hot Sauce. But as owner Mike “Smokey” Emerson puts it, “We’ve got nothing to hide so the sauce is on the side.” No wonder staffers wear shirts emblazoned with “The Hog Whisperer” on the back!
