Camel is unexpectedly delicious. Think veal but with a more gamey taste. "Camel is most easily found ground and frozen in the United States. One preparation I enjoy is to prepare meatballs with a slight touch of coriander, sea salt, harissa, tahini, freshly chopped parsley, and just enough egg to serve as a binder. Pan-fry in olive oil and serve in a steamed pita with shredded cabbage, carrot, lemon juice, and a tahini crema," says Tom Ryan, SVP of Sierra Meat & Seafood.
