If you are looking for something really unique to place on your grill this summer, you can't go wrong with iguana. "I had this once in Oaxaca, Mexico, and it was delicious! I know it was spit-roasted over open mesquite bramble and served almost shredded with a yellow mole, fresh hand-made tortillas, sautéed onions, and jalapeños, and I enjoyed too much Mezcal with it. The Iguana reminded me of the frog legs, in texture, though the taste was slightly richer, much like comparing chicken to duck," says Darren McGraw of Ampersand Wine Bar.
