"We served kangaroo loin recently which was really good," says Owner and Executive Chef Bruce Lefebvre of The Frog and the Peach in New Brunswick, NJ. "It is very sustainable as it is wild, from Australia. The meat is very lean, fine textured with a beefy, slightly sweet, and smoky flavor. A Kangaroo Burger with a glass of red wine is heart-healthy man food. Or pair it with beer for something really hoppy!"
