Tamayo Dog at Tamayo, Denver
First order of business: Request a spot on the rooftop of this Denver restaurant, which global chef Richard Sandoval opened in the city that he now calls home. You’ll be greeted by a panoramic view of the Rocky Mountains while you sit nearby the hammock of lights that drape over Larimer Square, one of the city’s most iconic blocks. Double down on pork with the Tamayo Dog, which is a bacon-wrapped hot dog topped with a chipotle rouille, pickled chiles, and a black bean puree. You’ll find this dog alongside the tortas and tacos section of this modern Mexican restaurant’s brunch menu. You’re in Coors country, of course, so you can get a hot dog and Coors Light combo for $6. Or, sip slowly on some tequila. (The bar is well-stocked with more than 100 different kinds). When you’re finished with brunch, head to nearby Confluence Park to kayak or explore downtown on two wheels with a B-Cycle bike.
