Fresh kale is having a pretty major moment—it’s absolutely packed with vitamins A, C and cancer-fighting nutrients—but it’s not always easy to figure out how to eat the slightly bitter, super leafy greens. Our favorite ways to reap the healthy benefits? Use the leaves in a super tasty smoothie, or extract the nutrients using a juicer.
We checked in with Eric Helms, creator of NYC’s Juice Generation, to learn the fastest, easiest ways to make a green smoothie or green drink using kale leaves. Give it spin—or a blend, as the case may be—and let us know how you feel after you sip. We bet you’ll love going green.
“Garden Green Coco” Recipe
Coconuts are packed with potassium and electrolytes, says Helms, which makes them great post-workout drinks, and ideal for summer.
1 young Thai coconut
1 handful of green kale
1 handful of spinach
Crack open coconut (using a cleaver and extreme care—or just buy the water and meat seperately) and pour the coconut water into a blender. Remove coconut meat with a spoon and add to blender. Add kale, spinach and banana. Blend on high for 30 seconds. Pour smoothie into the coconut and serve with a straw.
“Hail To Kale” Recipe
Another way to get your kale fix! Sip this kale drink, sweetened with watermelon, which is a best-seller on Eric Helms’ Juice Generation menu.
3 leaves of green kale
2 apples, seeded
2 slices of watermelon
1/4 lemon, peeled
Bunch up kale, and push through juicer with the apple. Follow with watermelon and lemon. Scrape off the foam and serve over ice.
