Thyme
Great for pork, chicken, and fish thyme is also an excellent herb for vegetables. Unlike dill, thyme is hard to grow from seed so it’s best to buy already established plants from a nursery. There are a variety of kinds of thyme, but lemon thyme is the hardiest and adds a zesty flavor to vegetables like asparagus. Thyme requires well-drained soil and full sun; some gardeners even plant thyme with gravel to make sure the soil drains enough. Thyme can be grown year-round in most of the United States, but during the winter outdoor plants should be covered with leaves or pine bows to protect them from harsh frosts.
