ROSEMARY-LEMON MOCKTAIL
Ingredients:
- ½ cup fresh lemon juice
- 1 ½ cups sugar
- 2 cups water
- 2 sprigs rosemary
- seltzer water
Directions:
1) Begin by making lemon-rosemary simple syrup. In a small saucepan, combine lemon juice, sugar, water, and 2 rosemary sprigs. Simmer gently over low heat, stirring occasionally, until sugar has completely dissolved.
2) Continue to simmer for another 2 minutes. set mixture aside to cool. Discard rosemary sprigs.
3) To serve, fill glasses with ice. add 2 parts lemon-rosemary syrup to one part seltzer.
Makes: 4–6 servings
