Don’t sweat the good stuff.
If you feel guilty and swear it’s the last time whenever you melt a half stick of butter or you pack salt onto a steak, then you’re in luck: Colicchio suggests an easy fix. “If you don’t want salt in your diet, then cut out processed food and you’ll be fine,” he says. With butter, it’s a different story, though. “There’s no substitute for butter. If you want butter flavor or if you’re making pastry, you can’t sub it,” he says, but emphasizes that moderation is the key in this case. “Just don’t go out there and use a stick of butter.” So much for our culinary curiosity about this heart-challenging entrant.Back to top
