When asked what pitfall ensnares amateur chefs the most, Colicchio doesn’t hesitate: “Seasoning: salt and pepper.” Fans of ‘Top Chef’ could’ve guessed, because it’s a complaint that comes up nearly every episode for some unfortunate contestant. And yet no one seems to learn Colicchio’s simple rule: Taste what you cook early and often, and don’t be bashful with the salt. And then taste it again.
