Warm them up.
By heating spices, you release their essential oils and intensify their aromas and flavors. Although toasting them in a pan is quick, many burn easily. Instead, try toasting them on a baking tray (a.k.a. a sheet pan) in a 325-degree oven for eight to 10 minutes. “Usually the indication when they’re done is when you start smelling them,” Sercarz says. “Don’t leave them there longer though. There’s smelling, and then there’s burning.”
