Here, Mariena Mercer, chef mixologist at the Chandelier Bar, demonstrates how to make one of their most popular libations inspired by Alice and Wonderland: We’re All Mad Here.
Gin is infused with butterfly pea flower, which has a low pH. When it hits citrus, the acid changes the color from blue to purple to pink. It’s a mesmerizing way to entertain your guests.
Here’s how to make it on your own.
Ingredients
- 1/2oz Chardonnay Cardamom Ginger Syrup*
- 1oz H20Apple Rosewater
- 1oz lemon juice
- 1/2oz SoHo Lychee
- 1/2oz St. Germain
- 11/2oz Empress Indigo Gin
For the Chardonnay Cardamom Ginger Syrup
- ½ cup chardonnay
- 1 liter simple syrup
- ¼ cup green cardamom pods (cracked)
- 1 cup ginger juice
Directions
For the Chardonnay Cardamom Ginger Syrup: Bring ingredients to a boil. Simmer for 20 minutes, let cool, and strain.
For the cocktail: Add the syrup, H20Apple Rosewater, lemon juice, SoHo Lychee, and St. Germain. Shake for 20 seconds. Add an ice sphere to a glass and pour Empress Indigo Gin over it. Then, add the cocktail mixture.
