How to Make Granola

A favorite at the Harbor House Inn, an historic luxury lodge in Elk, California, on the state’s rugged north coast, Matthew Kammerer’s granola is supercharged with enough hemp, flax, and pumpkin seeds to keep guests fortified for a day hiking the redwood forests or kayaking around the misty bluffs below.

  • ¾ cup steel-cut oats
  • 2 tbsp hemp seeds
  • 3 tbsp flax seeds
  • 2 tbsp sesame seeds
  • 1½ tbsp pumpkin seeds
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 1 tbsp vanilla extract
  • ⅓ cup honey
Heat oven to 300°F and line a sheet pan with parchment paper. Combine dry ingredients in a large mixing bowl.
In a saucepan, heat honey and vanilla until they become runny. Add honey mixture to dry ingredients and mix until completely combined.
Spread granola onto lined pan and bake for about 45 minutes, stirring and flipping every 15 minutes to ensure it cooks evenly. Cool completely before serving.
