There’s nothing better than a home-cooked meal—soup, vegetarian chili, a nice grilled steak. Everyone has their favorites, but for February Men’s Journal cover star James McAvoy, it’s Karahi Chicken, a spicy, saucy Indian dish made with a whole lot of onions. Probably more than you’re used to cooking with at once.
“You use like a kilo and a half of onions,” he told Men’s Journal at our cover shoot.
But all that onion-y goodness comes together beautifully with the rest of the dish: A mix of tomatoes, turmeric, garlic, and ginger all fried together in one pot. Add in a bunch of chicken and garam masala, as well as some coriander and chili, and you’ve got one tasty meal.
If you want to attempt this at home, McAvoy offered a few tips: Try taking some of the mix out of the pot and blending it to make it more like a sauce, and don’t be stingy with the garam masala.
“Not too much because it can get a bit medicinal, but like a lot,” he said. “A healthy amount. Don’t be shy.”
