NBA FIT Live Healthy Week: Broccoli With Lemon Linguini

Broccoli with Lemon Linguini


For the linguini:

  • 8 ounces dry linguini, cooked to al dente in lightly salted water
  • 2 tablespoons pasta water
  • 2 lemons juice and zest (3 ounces juice)
  • 2 ounces extra-virgin olive oil
  • 1/2 teaspoon red pepper flakes
  • 1/3 cup grated parmesan
  • 1 tablespoon chopped parsley
  • Salt and pepper

For the broccoli:

  • 2 clove garlic, sliced
  • ½ onion-sliced
  • 2 tablespoons extra-virgin olive oil
  • 1 head of broccoli, cut into 2-inch florets
  • 4 ounces stock or water
  • Salt


For the linguini:

In a bowl, mix lemon juice and zest, olive oil, red pepper flakes and parmesan toss with warm pasta and parsley, season with salt.

For the broccoli:

Cook onion and garlic in olive oil over medium heat until golden, about 5-7 minutes. Add broccoli and cook 1 minute. Add stock and a pinch of salt, cover and cook until liquid is reduced and broccoli is crisp-tender, about 5 minutes.

To finish:

Top linguini with broccoli and parmesan.
