If you’re looking for a little something sweet and a little something spicy, this is it.
The glaze on this salmon will have your tastebuds tingling, not to mention you’ll be fueling your body with a healthy dose of protein and omega-3.

Makes 2 servings
- 1 lb salmon filets
- 2 Tbsp peach preserves (no added sugar)
- 1 Tbsp olive oil
- Juice of 1/2 lime
- 1 large jalapeno, sliced
- Salt, to taste
How to make it
Preheat oven to 400° F.
In a small bowl whisk together the preserves, olive oil, and lime juice.
Sprinkle salmon with salt and place on a baking sheet skin side down. Top with half of the peach mixture and the lay a few slices of jalapeño across the top. Bake for about 5 minutes per half-inch of thickness. Half way through, brush with the remaining glaze.
