3. Scramble it
Instead of scrambled eggs, scramble firm or extra-firm tofu instead. First, sautee vegetables like peppers, onions, and zucchini in a skillet for 3 minutes. Next, crumble tofu with your hands or a fork and add it to the pan. Finally, toss in seasonings while the tofu cooks about three minutes longer, then sprinkle with some cheese.
