  • 1½ tbsp olive oil
  • 1 medium onion, diced
  • 1 tsp diced jalapeño pepper
  • 1 sweet yellow or red pepper, diced
  • 4 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (12 oz) jar of mild salsa divided into 1 cup and 1/4 cup portions
  • 1 (8 oz) package cracked freekeh
  • 2 ½ cups vegetable broth or water
  • 1 tsp onion powder
  • 1 to 3 tsp chipotle chili powder (optional)
Set your Instant Pot to Sauté. Add olive oil then add onion, jalapeño, sweet peppers, and garlic. Add the cumin and paprika and cook for 4 to 5 minutes until the onions are slightly translucent and the spices are fragrant. Add beans and 1 cup salsa. Simmer for 4 to 6 minutes. Remove to a bowl.
Cancel the Sauté function and add vegetable broth or water, freekeh, 1/4 cup salsa, onion powder, and chipotle chili powder.
Mix well then place the cover on securely. Turn valve to sealing position.
Using the manual setting, set your Instant Pot to high pressure. Then, using the adjust button, set the timer to 7 minutes. It will take a few minutes for the Instant Pot to reach the correct pressure.
When the timer runs out, switch Instant Pot to the Keep Warm setting, leaving lid on. Let the pressure release naturally (about 10 minutes, or when the float next to the vent drops). Switch valve to venting position, release remaining pressure, and open lid.
Add the bean and salsa mixture. Set the Instant Pot to Sauté and cook for another minute or two. Fill taco shells or tortillas and serve with your favorite toppings.
