Makes 4 servings
- 1 yellow onion, diced
- 10 small red potatoes, diced
- 2 large carrots
- 3 cups vegetable broth
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4-1/2 cup potato flakes (we like Bob's Red Mill)
How to make it
Add onions, potatoes, and carrots into Instant Pot with vegetable broth. Seal the lid and cook on Soup setting for 10 minutes.
When timer runs out, release pressure using valve.
Pour contents into blender and blend. Alternatively, mash with potato masher.
Pour mixture back into Instant Pot and add potato flakes (measure based on desired consistency), salt, and pepper. Stir together until combined.
