  • 1 cup cider vinegar
  • 1 cup water
  • ¼ cup salt
  • 2 tbs sugar
  • 4 Kirby cucumbers
  • 1 tsp black peppercorns
  • 1 tsp yellow mustard seed
  • 1 dried red chili
  • 2 peeled garlic cloves
  • Fresh dill
Heat 1 cup each cider vinegar and water on stove with ¼ cup salt and 2 tbs sugar.
Meanwhile, quarter clean 4 Kirby cucumbers and pack them vertically in a jar with fistful of fresh dill, 1 tsp each black peppercorns and yellow mustard seed, 1 dried red chili, and 2 peeled garlic cloves.
Pour hot brine over cucumbers, seal with a lid, and let come to room temperature. Transfer to fridge to pickle for a week.
