Mediterranean Toast

As a runner, I’m always looking for something quick and easy to fuel my exercise. I’m a huge fan of toast on Dave’s Killer Bread 21 Whole Grains & Seeds (thin-sliced) because each slice only has 60 calories but 12g of whole grains. In other words, it provides the fuel I need without overloading my stomach, and it makes the perfect base for these simple Mediterranean toast-toppers.

  • 1 slice of whole grain bread (I like Dave’s Killer Bread 21 Whole Grains & Seeds Thin-Sliced)
  • 6 cherry tomatoes, sliced in half
  • 4-5 cucumber slices, about 1 inch thick
  • 1 Tbsp tahini
  • 1 Tbsp feta cheese
  • Salt and pepper to taste
Toast the bread to your liking.
Top with sliced tomatoes and cucumbers.
Drizzle with tahini and sprinkle with feta cheese. Season with salt and pepper to taste.
