Make this delicious pork roast, then slice into 2-3″ slices and freeze for an easy weeknight dinner.
Simply defrost in the microwave or oven, and stuff in a sandwich, place over a salad, or alongside asparagus and quinoa.

Makes 12 servings
- 3-pound pork loin roast, boneless
- For the Herbed Pepper Rub:
- 2 Tbsp black pepper, cracked
- 2 Tbsp Parmesan cheese, grated
- 2 tsp dried basil
- 2 tsp dried rosemary
- 2 tsp dried thyme
- ¼ tsp garlic powder
- ¼ tsp salt
How to make it
Pat pork dry with paper towel.
In small bowl, combine all rub ingredients well, and apply to all surfaces of the pork roast. Place roast in a shallow pan and roast at 350° for 1 hour (20 minutes per lb), until internal temperature on a meat thermometer reads 145°.
Remove roast from oven. Let rest about 10 minutes before slicing.
