Roasted Rosemary Mushrooms

A tasty, low-calorie snack packed with antioxidants.

Mushrooms are super-low in calories (1 cup sliced has about 20 calories), but are brimming with nutrients like folate, thiamin, vitamin B6, iron, and zinc. Mushrooms also contain an antioxidant called L-ergothioneine, which has been linked to kidney and liver protection. Both these organs help naturally detox your body.

  • 1 lb mixed mushrooms
  • ¼ cup olive oil
  • 6 sprigs rosemary
  • ¼ tsp salt
  • 1/8 tsp freshly cracked black pepper

Preheat oven to 400°.

Place all ingredients on a baking sheet, and toss to combine. Spread evenly on baking sheet.

Roast for 25-30 minutes, stirring occasionally until tender and just starting to crisp.

Remove from oven, and discard all but one sprig of rosemary. Transfer mushrooms to a serving platter, and garnish with rosemary. Serve warm or at room temperature.
