Ales brewed in the Scottish tradition can vary in strength, but they always feature a prominent malt character instead of hops or fermentation-derived fruit and spice flavors. Founders’ Backwoods Bastard comes in at the very high end of the range (10.2-percent alcohol) where the barley malts gets extremely complex with rich caramel, wisps of smoke, and dark fruit flavors. Founders completes the beer by aging it in bourbon barrels that it stores in a cave to keep the temperature constant.
