Oak barrels are at the core to everything Crooked Stave founder Chad Yakobson does. But the magic of his beer is usually centered around the flavors that the wild yeast Brettanomyces creates inside the barrels, rather than any character the barrels impart on their own. Nightmare on Brett, however, matches the barrel character with the brewery’s calling card Brettanomyces flavors. The beer is loosely formulated like a Baltic porter, but it’s fully fermented with Brettanomyces before being transferred to either cognac, brandy, or Leopold Bros. whiskey barrels for further aging and fermentation. We’ve tried cognac and Leopold Bros. batches and greatly prefer the whiskey-barrel version. It mingles vanilla and bourbon with cherry pie flavors from the sour fermentation.
