New Holland boasts one of the world’s largest and most well-respected barrel-aging programs. The brewery receives a shipment of approximately 200 bourbon barrels every three weeks and most of them get filled with Dragon’s Milk, its barrel-aged imperial stout. The beer spends 90 days in the barrel before being bottled, and each cask is used twice before being sent back to distilleries where it will continue its life aging spirits. The brewery blends beers from the first- and second-use bourbon barrels together. The hot alcohol flavors from the first-use barrels are blended down with stronger wood flavors from the second-use barrels. The final beer comes in at 11-percent alcohol with rich vanilla and bourbon flavors layered into the roasty stout.
