Matthew Barbee set up his tiny Rockmill Brewery on his family land outside Columbus, Ohio. Rockmill focuses on Belgian styles and they’re all quite good, but the one that most consistently amazes us is his Cask Aged Tripel. The base beer is a textbook tripel with spicy and clove-like yeast character and a dry finish. Barbee uses wheat whiskey barrels to age the beer and they impart vanilla from the wood while cutting the alcohol heat. It’s a subtle touch that goes a long way and makes for one of the great Beligan beers we’ve ever tasted.
